100% Pinot Noir. Combination of five clones. Dijon 114, 115, Pommard, Swan, “R”. The clones do not ripen at the same time, so we pick grapes many times during harvest. Each of these clones are fermented separately and blended after aging in French and Hungarian oak for three years. The nose on this vintage is Strawberries with a hint of vanilla from our oak barrels. Cherry pie bursts out in the nose and carries through the palate. This Pinot Noir is round and full bodied. Long flavorful finish and lingering fruit and oak ending the sip. Delightful! Timothy and I both cook and we have fun creating pairings for our wines. We have paired grilled New York steaks, Pork Chops bone in, Craig Clairborne’s Chicken Saute and Pasta dishes with Sausage and home made Tomato Sauce.
