4years in French and Hungarian Oak, our Reserve Cabernet Sauvignon is voluptuous with seductive black cherry, plum and current aromas. Ripe, refreshing fruits that offer complexity and sophistication. A true Cabernet Sauvignon with structured elegance of soft vanilla and smooth satin textures on the long soft finish. This dynamic Cabernet displays a rich alluring ruby color that catches the eye. The nose offers up pleasant and mild aromas of currant, and boysenberry with a few blueberries and blackberries to round it out, all with a background of biscotti in cream. On the palate, it is extremely rich and mouth-coating with a lavish finish of concentrated baking spices such as nutmeg, clove, and cardamom. Beautiful baking spice tones are contrasted with delicious flavors of boysenberry, toasty caramel and cranberry. It is truly a full-bodied and expressive wine with rich, well-rounded tannins. This vivacious vino is drinking perfectly right now and will age nicely for 5 to 10 years.

This vino is a wine expressing true varietal characteristics. This beautifully bright cabernet showcases extreme versatility in your glass as well as in its potential pairing options including roasted rosemary and garlic leg of lamb, Cabernet marinated tri tip, as well as braised short ribs. Or enjoy it with meatballs in a roasted pepper and tomato sauce as envisioned by

Winemaker Notes
For our Reserve Program we pull out individual barrels that are worthy of Reserve status. Reserve is the best barrel of any of our lots. Each lot is a different vineyard, different clone and different soils and appellations within Napa Valley. I love to layer flavors of the different varietals along with either Hungarian Oak or French Oak aged barrels. Each of these oaks give us very subtle nuances such as Vanilla and toast for French and Toast with Spice, (think Cinnamon, Nutmeg). The Cabernet for this wine is from three distinct vineyards. Howell Mountain, Yountville and Coombsville. Each location, soil and clone of Cabernet Sauvignon are different. This comprises 89% of the blend. We aged this wine in barrel for three years to help it express itself fully. We have 6% Cabernet Franc. This varietal is the key to the nose on this wine and the refreshing quality and balance. The Cabernet Franc is from Oak Knoll region of Napa Valley.The 5% Merlot is from two vineyards in Napa Valley. Carneros and Oak Knoll. I love this varietal because it pulls together the Cabernet Sauvignon and Cabernet Franc with a rich, smooth backbone that results in an elegant balanced beautiful wine. ~Barb Spelletich~
Food Pairing Notes
This Cabernet Sauvignon in its youth craves the company of black peppered filet minion over blues cheese mashed potatoes with balsamic braised pears and sautéed spinach with candied walnuts.
